Tofu Stir-fry (vegan friendly)
Ingredients:
Chopped firm tofu
Different vegetables I've included:
A table spoon of hot chili oil
1 cup low sodium soy sauce
ramen noodles (without seasoning)
2 cups water
Directions:
Put oils and soy sauce in the non-stick pan. Something like this would work. Some people recommend a wok.
(Vegetable oil works too, you can also decrease the amount for low calorie, the principle is that you're keeping the ingredients from sticking and burning. )
Add tofu and brown. Add in vegetables. (I like to get the stir fry packets but any vegetables you like will do) Add water.
Break ramen as shown in the diagram for faster cooking. Submerge as much as possible in the water and boil/steam till noodles are soft and water is evaporated.
Let cool and enjoy!

- broccoli
- bean sprouts
- onion
- bell peppers
- zucchini
- squash
